Are my career plans realistic? How do you plan out your college education?

First of all during undergraduate years you won't be studying law. Law school is after those 4 years of undergraduate. In college pick a major that interests you; law school doesn't require a specific major. It seems like you will be best fit for creative writing or maybe a major in English. HOWEVER, if you are not planning on going to law school, then I would suggest getting a major with employable perspective, otherwise it would be a waste of money and time.
